Day 4 – cauliflower rice

I’m feeling a lot better after the awful migraines of the past few days, and my energy levels are definitely up. I can’t quite believe I’ve got this far without really missing the dairy or bread which is such a big part of my normal diet. I’ve  had no tea or coffee and have upped my water intake. Day 3 – Heartbreaking….

I knew this wasn’t going to be a great day. I was booked to take my gorgeous little grandson for his one-year jabs. I know he has to have them but I hate thinking of those needles puncturing his perfect skin.

We both had a good breakfast of porridge – mine with almond milk, he with full fat cows milk and yogurt. I do love porridge. It has to be one of the most perfect foods. With chopped apple, a few nuts and anything else you fancy. Day 2 – I’d like to teach the world to Ling……

Ling, ling, ling. Ling till you can’t ling any more.

It may not be the most attractive fish, and, as a member of the cod family, best eaten occasionally, but it does taste good.

Ling is not commonly eaten in the UK but is popular in Europe and USA. Some varieties grow pretty enormous and very ugly.

Day 1 – When the cook’s away…..

My journey to healthy eating began on a Monday morning (as all projects do!) with enthusiasm and excitement. My morning shake was a blend of:

  • 1 scoop chocolate vegan protein powder
  • 1 scoop vanilla vegan protein powder
  • frozen spinach
  • blueberries
  • powdered phytonutrients
  • fibre boost
  • homemade almond milk
