I’m feeling a lot better after the awful migraines of the past few days, and my energy levels are definitely up. I can’t quite believe I’ve got this far without really missing the dairy or bread which is such a big part of my normal diet. I’ve had no tea or coffee and have upped my water intake. My morning protein shakes are keeping me satisfied until mid-afternoon. A small snack is enough to keep me going until dinner at around 7.30pm Continue reading “Day 4 – cauliflower rice”
I knew this wasn’t going to be a great day. I was booked to take my gorgeous little grandson for his one-year jabs. I know he has to have them but I hate thinking of those needles puncturing his perfect skin.
We both had a good breakfast of porridge – mine with almond milk, he with full fat cows milk and yogurt. I do love porridge. It has to be one of the most perfect foods. With chopped apple, a few nuts and anything else you fancy. If I need a bit of sweetness I add a little swirl of coconut nectar (divine) or chopped up dried fig (decadent). Continue reading “Day 3 – Heartbreaking….”
Ling, ling, ling. Ling till you can’t ling any more.
It may not be the most attractive fish, and, as a member of the cod family, best eaten occasionally, but it does taste good.
Ling is not commonly eaten in the UK but is popular in Europe and USA. Some varieties grow pretty enormous and very ugly.
Why am I “linging” today? Because that was the main ingredient in my first Mindful Chef dinner. Continue reading “Day 2 – I’d like to teach the world to Ling……”
It’s arrived. Exciting!
Almond milk is trendy, healthy and expensive. Let’s try making it ourselves.
Easy peasy, iemon squeezy!
My journey to healthy eating began on a Monday morning (as all projects do!) with enthusiasm and excitement. My morning shake was a blend of:
- 1 scoop chocolate vegan protein powder
- 1 scoop vanilla vegan protein powder
- frozen spinach
- powdered phytonutrients
- fibre boost
- homemade almond milk
Doesn’t sound the most tasty combo but I have to say it was actually pretty delicious. Continue reading “Day 1 – When the cook’s away…..”

Did You Know?
As we age, our skin’s needs for care and support change in order to keep it looking healthy. Youthful and healthy looking skin appears smooth, radiant, hydrated, even toned, and firm without the appearance of fine lines, wrinkles, dark spots, and redness.
According to the American Academy of Dermatology: Production of collagen and elastin slows down a dramatic 65% between the ages of 20 and 80. The thickness of the skin decreases a staggering 6% every 10 years. The sun causes 90–95% of wrinkles, lines, as well as brown, red and white discolourations on our bodies.
Our biology and genes account for only about 10% of the visible signs of ageing. In general, the darker the skin, the less visible the signs of ageing. and thicker skin does not show ageing as fast as thinner, more fragile skin types – which is why men’s skin ages more slowly.
The other 90% of our skin age is down to external factors such as smoking, too much alcohol, poor nutrition, and – the biggest culprit – sun exposure. Free radicals are considered to be a major contributor to the ageing process. Free radicals are created by UV exposure, pollution, stress, smoking, and normal metabolic processes. Free radicals bring about changes that lead to the degradation of the skin’s firmness (collagen) and elasticity (elastin) that is characteristic of photo aged skin.
The visible symptoms of extrinsic ageing include: wrinkling, sagging, discolouration, pigmented spots, thin skin, spidery lines, and lack of colour.
We all want radiant, youthful-looking skin. So what can we do to minimise – or reverse – the process? Continue reading “Beat the signs of ageing with targeted nutrition and skincare”
